Coconut-Lemongrass Cold Brew Collage

Preparation

1. Prepare lemongrass: Bruise lemongrass stalks with the back of a knife and cut into 2-inch pieces
2. Combine ingredients: In a large jar, mix coarse ground coffee with room temperature water
3. Add aromatics: Add bruised lemongrass pieces to the coffee mixture
4. Steep: Cover and refrigerate for 12 hours
5. Strain: Filter through fine-mesh strainer, then coffee filter for clarity
6. Prepare coconut layer: Mix coconut milk with simple syrup

Assembly

1. Fill glasses with ice
2. Pour cold brew concentrate to fill 2/3 of glass
3. Slowly pour sweetened coconut milk over the back of a spoon to create layers
4. Garnish with lemongrass stalk if desired
