A refreshing tropical cold brew that combines smooth coffee with creamy coconut milk and aromatic lemongrass. This make-ahead recipe creates a beautifully layered drink that’s perfect for hot days. The lemongrass adds a subtle citrusy fragrance while coconut milk provides richness without overwhelming the coffee’s natural flavors.

Preparation

  1. Prepare lemongrass: Bruise lemongrass stalks with the back of a knife and cut into 2-inch pieces
  2. Combine ingredients: In a large jar, mix coarse ground coffee with room temperature water
  3. Add aromatics: Add bruised lemongrass pieces to the coffee mixture
  4. Steep: Cover and refrigerate for 12 hours
  5. Strain: Filter through fine-mesh strainer, then coffee filter for clarity
  6. Prepare coconut layer: Mix coconut milk with simple syrup

Assembly
