Cold Brew Base
- Combine coarsely ground coffee with room temperature water in a jar or cold brew maker
- Stir gently to ensure all grounds are saturated
- Cover and steep in refrigerator for 12 hours
- Strain through fine mesh or cold brew filter
Blue Matcha Foam
- Whisk matcha powder with 2 tbsp warm water until smooth
- Add blue spirulina powder and whisk until combined
- Add milk and sweetener, then froth using milk frother or French press
Assembly
- Fill glasses with ice
- Pour cold brew concentrate, leaving 2 inches at top
- Gently spoon blue matcha foam over coffee to create layers
- Serve immediately with a straw
