Method
Fill a tall glass with ice cubes to chill the drink.
Pull a double shot of espresso (approximately 30-36ml) using your espresso machine.
Pour the tonic water over the ice in the glass.
Slowly pour the hot espresso over the back of a spoon or directly onto the ice to create a layered effect.
Gently stir the mixture once or twice to combine the flavors without losing too much carbonation.
Garnish with a slice of citrus fruit and serve immediately.
